Easy Mushroom and Carnitas Frittata

Today I’ve decided to do something a little different and share a recipe for a delicious Frittata I made yesterday.  This is Paleo/Whole 30 and food lovers friendly!  It’s a great recipe to make during meal prep and can easily give you portions for your whole weeks worth of breakfasts’.  It’s super simple to assemble and bakes in under 40 min.

Ingredients:

  • 10 organic eggs
  • 3 tablespoons coconut milk
  • 10-15 asparagus (I snapped off the thick ends so they would bake easier)
  • 1 to 1-1/2  cups of Carnitas (or any meat of your choice)
  • 1 cup sliced mushrooms
  • Pepper and Salt to taste
  • 3 tablespoons parsley flakes or fresh parsley
  • Olive oil (enough to grease your baking dish)

 

  1. Pre-heat oven to 350 degrees
  2. Whisk the eggs together in a large mixing bowl
  3. Dump in the rest of the ingredients
  4. Pour into a (olive oil) greased pie dish
  5. Bake for 35 minutes or until center is not ‘jiggly’ anymore (tap it with your finger, it should be firm)
  6. Let sit for 5-10 minutes to cool/set
  7. Top with avocado slices and serve with fresh fruit
  8. Enjoy
